{"id":1759,"date":"2020-10-18T10:20:48","date_gmt":"2020-10-18T10:20:48","guid":{"rendered":"http:\/\/atableforone.co.za\/?p=1759"},"modified":"2020-10-18T10:20:48","modified_gmt":"2020-10-18T10:20:48","slug":"baby-button-cauliflower-fried-rice","status":"publish","type":"post","link":"https:\/\/atableforone.co.za\/index.php\/2020\/10\/18\/baby-button-cauliflower-fried-rice\/","title":{"rendered":"Baby button cauliflower-fried rice"},"content":{"rendered":"\n<p><em>Recipe courtesy of The South African Mushroom Farmers&#8217; Association<\/em><\/p>\n\n\n\n<p>Serves 4\u20136<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p>500g baby button mushrooms, sliced in half<br>2 Tbsp sesame oil<br>2 garlic cloves, minced<br>1 Tbsp freshly grated ginger<br>1-2 fresh chillies, sliced<br>1 large head of cauliflower<br>1 cup fresh or frozen edamame beans, shelled<br>1 large yellow pepper, diced<br>2 Tbsp soy sauce<br>4 spring onions, thinly sliced<\/p>\n\n\n\n<p>Salt and pepper, to taste<\/p>\n\n\n\n<p>To serve: freshly torn basil leaves, toasted peanuts &amp; lime wedges<\/p>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<p>Cut out the cauliflower core and discard. Cut the rest into florets.<\/p>\n\n\n\n<p>Pulse florets in a food processor until small rice like \u2018grains\u2019.<\/p>\n\n\n\n<p>(If you do not have a food processor you can finely dice the cauliflower or grate it)<\/p>\n\n\n\n<p>Heat sesame oil in a large wok or deep sided frying pan over medium-high heat.<\/p>\n\n\n\n<p>Add the mushrooms and cook until lightly golden brown. Season.<\/p>\n\n\n\n<p>Add the garlic, ginger, chilli and stir fry until fragrant.<\/p>\n\n\n\n<p>Add the cauliflower, edamame and bell pepper.<\/p>\n\n\n\n<p>Stir fry quickly to cook the veg until just tender.<\/p>\n\n\n\n<p>Season with soy sauce and black pepper.
