{"id":2606,"date":"2023-06-27T09:59:52","date_gmt":"2023-06-27T09:59:52","guid":{"rendered":"https:\/\/atableforone.co.za\/?p=2606"},"modified":"2023-06-27T09:59:52","modified_gmt":"2023-06-27T09:59:52","slug":"recipe-artichoke-pea-chevin-risotto","status":"publish","type":"post","link":"https:\/\/atableforone.co.za\/index.php\/2023\/06\/27\/recipe-artichoke-pea-chevin-risotto\/","title":{"rendered":"Recipe: ARTICHOKE, PEA &amp; CHEVIN RISOTTO"},"content":{"rendered":"\n<p><strong><em>Recipe <\/em><\/strong><em>by Chef Kerry Kilpin<\/em><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300ml good chicken or vegetable stock<\/li>\n\n\n\n<li>Boiling water<\/li>\n\n\n\n<li>Olive oil<\/li>\n\n\n\n<li>1tsp chopped garlic<\/li>\n\n\n\n<li>1 onion chopped<\/li>\n\n\n\n<li>120g Arborio rice<\/li>\n\n\n\n<li>1 tin artichokes drained and chopped<\/li>\n\n\n\n<li>90ml Steenberg Rattlesnake Sauvignon Blanc<\/li>\n\n\n\n<li>100g grated parmesan cheese<\/li>\n\n\n\n<li>50g butter<\/li>\n\n\n\n<li>100g peas<\/li>\n\n\n\n<li>5g chopped basil<\/li>\n\n\n\n<li>5g chopped parsley<\/li>\n\n\n\n<li>1 log goats\u2019 chevin<\/li>\n\n\n\n<li>Prawns \u2013 optional<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Heat the stock in a pot to a simmer.<\/p>\n\n\n\n<p>In a second pot, sweat the onions and garlic in a little olive oil for 3 minutes without colouring. Add the rice and chopped artichokes and cook for a further 2 minutes or until the rice starts to become slightly translucent on the edges.&nbsp; Add the wine and stir until the rice thickens and half the wine has evaporated.<\/p>\n\n\n\n<p>Turn the heat down, gradually add the stock ladle by ladle.&nbsp; Stir occasionally.&nbsp; As the rice thickens up add more stock, you do not want it to get too thick.&nbsp; Cook for 15 \u2013 20 minutes until the rice is cooked. (The grains should be white in colour but have a firm centre).<\/p>\n\n\n\n<p>Add the butter, peas, herbs and parmesan. Season to taste.
