{"id":2752,"date":"2023-08-30T08:33:42","date_gmt":"2023-08-30T08:33:42","guid":{"rendered":"https:\/\/atableforone.co.za\/?p=2752"},"modified":"2023-08-30T08:33:42","modified_gmt":"2023-08-30T08:33:42","slug":"recipe-red-wine-braised-short-ribs","status":"publish","type":"post","link":"https:\/\/atableforone.co.za\/index.php\/2023\/08\/30\/recipe-red-wine-braised-short-ribs\/","title":{"rendered":"RECIPE: RED-WINE-BRAISED SHORT RIBS"},"content":{"rendered":"\n<p>Served on a bed of&nbsp;<em>lerotse<\/em>&nbsp;maize rice risotto&nbsp;&nbsp;&nbsp;<\/p>\n\n\n\n<p>Paired with&nbsp;<a href=\"https:\/\/store.nederburg.com\/products\/baronne-2022\">Nederburg Baronne 2022<\/a><\/p>\n\n\n\n<p>INGREDIENTS:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Red wine braised beef short ribs<\/li>\n\n\n\n<li>2kg bone-in, beef short ribs\u00a0<\/li>\n\n\n\n<li>2 tbsp salt\u00a0<\/li>\n\n\n\n<li>3 tbsp black pepper\u00a0<\/li>\n\n\n\n<li>2 tbsp vegetable oil\u00a0<\/li>\n\n\n\n<li>1 medium-sized onion, finely chopped\u00a0<\/li>\n\n\n\n<li>3 celery sticks, finely chopped\u00a0<\/li>\n\n\n\n<li>2 medium-sized carrots, finely chopped\u00a0<\/li>\n\n\n\n<li>4 garlic cloves, thinly sliced\u00a0<\/li>\n\n\n\n<li>2 tbsp tomato paste\u00a0<\/li>\n\n\n\n<li>2 cups Nederburg Baronne 2022\u00a0<\/li>\n\n\n\n<li>2 bay leaves\u00a0<\/li>\n\n\n\n<li>2 sprigs fresh thyme\u00a0<\/li>\n\n\n\n<li>2 cups beef stock\u00a0<\/li>\n\n\n\n<li>Finely chopped flatleaf parsley, for serving\u00a0<\/li>\n<\/ul>\n\n\n\n<p><strong><em>Lerotse risotto<\/em><\/strong>&nbsp;&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup\u00a0<em>lerotse<\/em>\u00a0pur\u00e9e (or pumpkin pur\u00e9e as substitute)\u00a0\u00a0<\/li>\n\n\n\n<li>2 tbsp olive oil\u00a0\u00a0<\/li>\n\n\n\n<li>2 tbsp butter, about 30g\u00a0\u00a0<\/li>\n\n\n\n<li>\u00bd onion, finely diced\u00a0<\/li>\n\n\n\n<li>1 celery stick, very finely diced\u00a0<\/li>\n\n\n\n<li>400g maize rice, cooked (but undercooked by 10 minutes)\u00a0\u00a0<\/li>\n\n\n\n<li>120ml Nederburg white wine,\u00a0such as\u00a0<a href=\"https:\/\/store.nederburg.com\/products\/2021-nederburg-the-anchorman-ovp-chenin-blanc\">Heritage Heroes The Anchor Man Chenin Blanc 2021<\/a><\/li>\n\n\n\n<li>500ml chicken stock, hot\u00a0<\/li>\n\n\n\n<li>50g Parmesan cheese, finely grated\u00a0<\/li>\n\n\n\n<li>3 tbsp cr\u00e8me fra\u00eeche\u00a0<\/li>\n\n\n\n<li>Micro cress to serve \u00a0<\/li>\n\n\n\n<li>2 tbsp white sugar<\/li>\n\n\n\n<li>1 lemon, zested and juiced\u00a0\u00a0<\/li>\n<\/ul>\n\n\n\n<p>METHOD:<\/p>\n\n\n\n<p><strong><em>Red wine braised beef short ribs<\/em><\/strong><\/p>\n\n\n\n<p>Preheat the oven to 180\u00b0C with a rack in the center position.&nbsp;Generously season the short ribs with salt and pepper.&nbsp;Heat the oil in a large Dutch oven over medium-high heat. Once the oil just begins to smoke, working in batches, add the short ribs and cook until browned, 2 to 3 minutes per side. Transfer the ribs to a plate. Remove all but 2 tbsp fat from the pot.&nbsp;Reduce the heat to medium. Add the onion, celery and carrots, cook, stirring constantly, until softened, about 5 minutes.&nbsp;Add the garlic and cook, stirring, until fragrant, about 1 more minute. Add the tomato paste, stirring to combine. Pour in the wine to deglaze and stir to incorporate.&nbsp;Bring to a simmer over medium heat and allow the liquid to reduce by&nbsp;about 15 minutes.&nbsp;Return the ribs to the pan along with any collected juices. Add the bay leaves, thyme and beef stock.&nbsp;&nbsp;Increase the heat to high and bring to a boil, cover the pot and transfer it to the oven. Cook until the ribs are tender and falling off the bone, about 2 hours.&nbsp;Discard the bay leaves and thyme stems. Using tongs, transfer the meat to a serving platter and tent with foil to keep warm.&nbsp;<\/p>\n\n\n\n<p><em><strong>Lerotse risotto<\/strong><\/em><\/p>\n\n\n\n<p>Heat oil and butter in a round casserole and add onion and celery with a little salt.&nbsp;Fry for 5 minutes until translucent.&nbsp;Add the maize rice and stir well, ensuring every grain is coated in oil. Fry to toast and cook the maize rice for another 3 minutes.&nbsp;Pour in the wine and let it bubble until it\u2019s almost all evaporated.&nbsp;Add the stock a ladleful at a time, stirring constantly. Taking care to keep the risotto dry.&nbsp;Adding more stock only once the last ladleful has been absorbed.&nbsp;Once the rice is almost cooked, stir through the pure\u00e9, and cook for a further 5 minutes, stirring regularly.&nbsp;Once the rice and vegetables are cooked, stir through the Parmesan, cr\u00e8me fra\u00eeche, lemon zest and juice, and season to taste.&nbsp;<\/p>\n\n\n\n<p><strong>To serve<\/strong><\/p>\n\n\n\n<p>Serve the braised short ribs with the&nbsp;<em>lerotse<\/em>&nbsp;risotto, and garnish with flatleaf parsley.&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe is hard work \u2013 but it&#8217;s all worth it in the end.
