{"id":2998,"date":"2024-05-22T11:38:50","date_gmt":"2024-05-22T11:38:50","guid":{"rendered":"https:\/\/atableforone.co.za\/?p=2998"},"modified":"2024-05-22T11:38:50","modified_gmt":"2024-05-22T11:38:50","slug":"zola-nenes-mushroom-butter-bean-curry-with-fat-bastard-chardonnay","status":"publish","type":"post","link":"https:\/\/atableforone.co.za\/index.php\/2024\/05\/22\/zola-nenes-mushroom-butter-bean-curry-with-fat-bastard-chardonnay\/","title":{"rendered":"ZOLA NENE\u2019S MUSHROOM &amp; BUTTER BEAN CURRY WITH FAT\u00a0bastard\u00a0Chardonnay"},"content":{"rendered":"\n<p>Serves: 4<br>Prep Time: 10 minutes<br>Cooking Time: 30 minutes<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Tbs canola oil<\/li>\n\n\n\n<li>1 large onion, sliced<\/li>\n\n\n\n<li>8 curry leaves<\/li>\n\n\n\n<li>1-2 red chillies<\/li>\n\n\n\n<li>1 tsp cumin seeds<\/li>\n\n\n\n<li>1 tsp black mustard seeds<\/li>\n\n\n\n<li>2 Tbs garlic &amp; Ginger paste<\/li>\n\n\n\n<li>2 Tbs garam masala<\/li>\n\n\n\n<li>1 Tbs mild curry powder<\/li>\n\n\n\n<li>1 cup chopped tomatoes<\/li>\n\n\n\n<li>400g chopped mushrooms<\/li>\n\n\n\n<li>1 cup vegetable stock<\/li>\n\n\n\n<li>3 Tbs fruit chutney<\/li>\n\n\n\n<li>1 tin (400ml) coconut milk<\/li>\n\n\n\n<li>1 tin (400g) butterbeans, drained<\/li>\n\n\n\n<li>20g fresh coriander, chopped<\/li>\n\n\n\n<li>Salt and pepper to taste<\/li>\n\n\n\n<li>Cooked rice to serve<\/li>\n<\/ul>\n\n\n\n<p><strong>Method:<\/strong><br><br>1. Heat oil in a pot over medium heat.<br>2. Add onions, curry leaves, whole red chilly, cumin seeds and mustard seeds, saut\u00e9 until onions soften and begin to brown.<br>3. Add garam masala, curry powder, garlic and ginger paste and tomatoes, then saut\u00e9 for a minute to cook the spices.<br>4. Stir in mushrooms to coat in the spices, deglaze with stock and leave to saut\u00e9 for a minute.<br>5. Add fruit chutney and coconut milk then leave to simmer for 5 minutes.<br>6. Stir in butter beans and chopped coriander then simmer for another 5 minutes.<br>7.
