Christmas Tree Cheeseboard

Impressive and cute, these puff pastry Christmas trees are sure to dazzle your guests.

Serves: 6-8

Ingredients

For pastry Christmas trees:

  • 1 packet (400g) puff pastry, defrosted
  • ½ cup (30g) grated parmesan
  • Handful or thyme and/or rosemary leaves, chopped
  • 1 whisked egg, for glazing
  • Selection of 3-5 different cheeses (we used gouda with cumin, goats cheese, mature cheddar, vintage cheddar and camembert)
  • 1 punnet (100g) fresh cherries
  • Handful of pomegranate rubies
  • Handful of berries (optional)
  • Nuts and mint

Method

  • Preheat oven to 200°C.
  • Roll pastry out on a floured surface to 3mm thick.
  • Glaze with egg wash and sprinkle with parmesan and herbs, if using.
  • Cut ¾ of the pastry into triangles.
  • Press stars out of remaining pastry using a 5cm cookie cutter.
  • Place 4–5 triangles, making sure they overlap about halfway each, on a lined baking tray. Place a star on top. Repeat with remaining pastry to create 4-5 trees.
  • Bake for 25–30 minutes or until golden.
  • Place Christmas tree pastries on a board with cheese and fruit. Sprinkle with nuts and mint and serve.
