Impressive and cute, these puff pastry Christmas trees are sure to dazzle your guests.
Serves: 6-8
Ingredients
For pastry Christmas trees:
- 1 packet (400g) puff pastry, defrosted
- ½ cup (30g) grated parmesan
- Handful or thyme and/or rosemary leaves, chopped
- 1 whisked egg, for glazing
- Selection of 3-5 different cheeses (we used gouda with cumin, goats cheese, mature cheddar, vintage cheddar and camembert)
- 1 punnet (100g) fresh cherries
- Handful of pomegranate rubies
- Handful of berries (optional)
- Nuts and mint
Method
- Preheat oven to 200°C.
- Roll pastry out on a floured surface to 3mm thick.
- Glaze with egg wash and sprinkle with parmesan and herbs, if using.
- Cut ¾ of the pastry into triangles.
- Press stars out of remaining pastry using a 5cm cookie cutter.
- Place 4–5 triangles, making sure they overlap about halfway each, on a lined baking tray. Place a star on top. Repeat with remaining pastry to create 4-5 trees.
- Bake for 25–30 minutes or until golden.
- Place Christmas tree pastries on a board with cheese and fruit. Sprinkle with nuts and mint and serve.
